The Virgin Olive Oil phenolic compounds include about 30 molecules from different chemical classes: phenolic alcohols, such as hydroxytyrosol and tyrosol, phenolic acids (e.g., caffeic and vanillic), flavones (luteolin and apigenin), lignans, and secoiridoids.
